Vineyard:

Chorey is located immediately to the north of Beaune and close to Savigny on either side of the road from Dijon to Beaune. Half of the production comes from a village appellation called "Les Beaux Monts" which is one of the highly regarded vineyards of Chorey.

Yield: 45 Hectoliters/hectare

Production: 7,000 bottles

Description:

A rather bright, ruby garnet color.

Good aromatic intensity with aromas of small black fruits (blackcurrant, blackberry) built upon notes of cocoa and flowers.

Well delineated on the palate, a good freshness with fruit. The tannins are fine and elegant with a good structure.

Winemaking and ageing:

Grapes the domain from « Les Champs Longs », in the 2nd year of conversion towards organic certification.  Maturing in oak barrels (20% new oak) over 12 months. Bottled in the beginning of September 2012.

Service:

This wine should be served just out of the cellar, at 12-13°C. This wine from Chorey calls upon a fine and light cuisine: fine charcuterie, roasted chicken, white meats in sauces and pieces of grilled beef. Relatively mild cheeses are equally good partners, such as Brillat-Savarin, Chaource, Cîteaux…
